Since the density of the pit is nearly identical to the fruit’s flesh, machinery alone cannot guarantee a clean result. Instead, a combination of advanced technology and meticulous hand-sorting is used to achieve the highest quality.

Fresh, ripe sour cherries are dried naturally under the sun before undergoing four laser scans to identify defects and pit fragments. Because machinery cannot fully separate pits from the fruit, each batch is then hand-sorted slowly at a rate of around 20 kilograms per person per hour. On average, two pit fragments per kilogram are identified and removed, ensuring safety and quality.
Since sour cherries are especially attractive to sow bugs, they undergo an extended fumigation process in a strictly isolated production environment. This ensures product integrity and long shelf life.
